Food blogger Jo Brigdale has created a menu of comfortably light recipes to enjoy during the Spring Summer months. In her first post, Jo has created a starter that’s easy to create and very tasty! Follow her instructions below for Eggs with Mushrooms and Roasted Pepper Sauce.
Are you looking for a healthier way to start the day? Then Jo’s eggs with mushrooms and roasted pepper sauce is the answer! It is very easy to make and it will give you enough energy for whatever activities you have planned until lunchtime. Ingredients (Serves 2)
For the roasted pepper sauce
• 2 Ramiro Peppers (or other sweet pointed pepper)
• 1 teaspoon smoked sweet paprika
• ½ teaspoon dried chilli flakes
• 3-5 tablespoons Olive Oil
• Salt and Pepper, to taste
For the mushrooms
• 4 large flat Portobello mushrooms, stalk removed
• 20g butter (optional)
• Salt and pepper
To serve
• Spinach leaves, washed
• 4 eggs, poached with whatever method you choose
Method
Preheat oven to 180 degrees C. Place the peppers on a baking tray and roast in the oven for 30 minutes until golden and blistered.
Remove from the oven and place in a bowl, covered in cling film for five minutes until cooler and the skin has softened.
Remove the skin, core and seeds from the peppers and place in a blender with the paprika, chilli flakes, olive oil and seasoning. Blend until you get a smooth consistency. Set aside.
Put the mushrooms on a baking tray, put a small amount of butter in the middle of them and season with salt and pepper. Next put them in the preheated oven and bake for 20 minutes, turning halfway through until softened and golden.
Serve the dish by putting the mushrooms on the plate first, topped with some spinach and the eggs. Finish by adding the sauce and serve. Eat and enjoy!
